What and Why ?
What is the Difference Between Normal Ghee and A2 billion Ghee?
1. The Source of the Milk (A1 vs. A2)
- Normal Ghee: Commercially produced ghee is usually made from the milk of crossbred, exotic, or regular cows (like Holstein or Jersey), or a mix of cow and buffalo milk. This milk predominantly contains the A1 beta-casein protein, which some studies suggest can be difficult to digest and may cause inflammation in the gut.
- A2 Ghee: Authentic A2 ghee is made strictly from the milk of indigenous, native cows (like your Gir cows). These cows naturally produce milk containing only the A2 beta-casein protein. This protein structure is much closer to human mother's milk, making it highly digestible, safe for many lactose-sensitive individuals, and excellent for gut health.
2. The Preparation Method (Cream vs. Bilona)
- Normal Ghee (Industrial Method): To mass-produce ghee quickly and cheaply, commercial brands use the "Direct Cream" method. Machines separate the cream (malai) directly from raw, unfermented milk, and that cream is immediately boiled to make ghee. It skips the fermentation process entirely.
- A2 Bilona Ghee (Traditional Ayurvedic Method): This is a slow, labor-intensive process rooted in Ayurveda.The pure A2 milk is first boiled over firewood.It is cooled and inoculated with a natural starter to turn the entire batch of milk into curd (yogurt).The curd is then churned using a wooden churner called a Bilona in a slow, bi-directional motion to extract the butter (Makkhan).Finally, this butter is slowly heated in a brass or clay pot to yield golden ghee.
3. Nutritional Profile & Health Benefits
- Normal Ghee: While it is a source of fat, the industrial extraction process strips away many of the milk's natural nutrients. It can be heavier on the digestion system.
- A2 Bilona Ghee: Because it goes through the culturing (curd) process, Bilona ghee is packed with gut-friendly probiotics, butyric acid (which reduces inflammation), and Omega-3 fatty acids. It is also rich in fat-soluble vitamins like A, D, E, and K, which support immunity, glowing skin, and bone health.
Why Bilona costs more ?
Normal Ghee: The cream method is highly efficient. It only takes about 3 to 5 liters of milk to produce 1 liter of normal ghee, making it cheap to produce and sell.
A2 Bilona Ghee: The traditional churning method is a labor of love. It takes 25 to 30 liters of pure A2 milk to produce just 1 liter of Bilona ghee. This low yield, combined with the ethical upkeep of the cows and the manual labor, is why authentic Bilona ghee commands a premium price.

- Others: Made quickly using the "direct cream" method from mixed or A1 milk. It is often heated rapidly, stripping away natural nutrients and resulting in a flat aroma and greasy texture.
- Us: We use strictly A2 milk from indigenous Gir cows. We follow the ancient Ayurvedic Bilona method—turning milk into curd, hand-churning it in wooden vessels, and slowly heating the butter. It takes up to 30 liters of milk to make a single liter of our ghee, resulting in a nutrient-dense, granular superfood packed with probiotics.
3. Wood-Pressed Oils vs. Refined Cooking Oils
- Others: Commercial oils are extracted using harsh chemical solvents (like hexane) and are refined at extreme heat (often over 200°C). This destroys the oil's natural antioxidants, alters its molecular structure, and leaves behind trace chemicals.
- Us: We crush our seeds using traditional wooden presses at room temperature. This cold-extraction method retains 100% of the natural vitamins, antioxidants, and original flavor profile of the seeds. Our oils are thick, aromatic, and genuinely heart-healthy.
4. Wild & Pure Honey vs. Supermarket Syrup
- Others: Most commercial honey is heavily filtered and ultra-pasteurized (heated to high temperatures) to prevent crystallization. This kills the beneficial enzymes and pollen. Many are also secretly diluted with cheap corn or rice syrup.
- Us: Our honey is raw, unfiltered, and ethically sourced directly from natural hives. Because we do not heat or ultra-filter our honey, it retains all its natural pollen, enzymes, and antibacterial properties—exactly as the bees intended.
