One of the easiest ways to get a quick indication of your ghee's purity is by using the warmth of your hand.
How to Do It
Take about half a teaspoon of ghee and place it on your palm.
What to Look For
Pure cow ghee usually begins to melt quickly because its melting point is close to body temperature (around 32°C–35°C).
If the ghee remains unusually hard, feels waxy, or takes a long time to soften, it may contain higher-melting fats such as palm oil or hydrogenated vegetable fat. However, keep in mind that room temperature can also affect the result, so this test should not be considered conclusive on its own.
2. The Heat Test
Heating ghee can reveal certain characteristics of its quality.
How to Do It
Warm a clean pan and add one teaspoon of ghee.
What to Look For
Pure ghee should melt smoothly and release its rich, nutty aroma almost immediately.
Excessive foaming, unusual residue, or an artificial smell may indicate excess moisture or the presence of added oils. However, colour changes during heating can vary depending on the source of the milk and the preparation method, so colour alone should not be used to judge purity.
3. The Iodine Test
This test helps detect the presence of starch-based adulterants.
